Yes, I am on your end of the outlier spectrum. (Last time I did crossplay: I used no binding, padding or special tailoring at all, other than creative placement of waistline, and posted photos saying I probably looked too feminine. And got people commenting about how I looked perfectly masculine, no fear! who didn't realize that I wasn't actually male-bodied.)
Anyway, if I have time to make a doublet, I might just do what you suggest here. (And if I don't have time for anything, I'll probably pass reasonably well in just the jerkin.) But I would like to be able to strip down to just my shirt at the bachelor party / wrap-up if I want to, and as it stands, "just the shirt" has a fairly high risk of showing more than I'd like. (Partly because of the fact that it's open so far down the front, so my ideal binder would both hold my breasts out of the way, and be cut-out down the center to show off my chest hair. But just something that'll keep them flat and covered would be good.)
